FOR more than three decades, Accor has been committed to sustainable development. As part of the Accor hotel chain, Novotel & ibis Styles Jakarta Mangga Dua Square has made a full commitment since 2020 to contribute to the overall sustainability program, starting from hotel operations, staying and dining experiences for guests, to staff involvement in their work routines daily.
This sustainability program transformation includes several initiatives, including a sustainable stay program (Sustainable Stays)responsible food cycle (Responsible Food Cycle), sustainability programs for staff, and sustainability guidelines for travel (Sustainability Explore).
Various major environmental problems such as pollution, plastic waste, greenhouse effect, gas emissions, etc., have become a major concern. All these forms of environmental pollution have a wide impact, from land, sea, to air, and overall affect the balance of the ecosystem. Sticking to its commitment to reduce these problems, Novotel & ibis Styles Jakarta Mangga Dua Square seeks to take further steps by implementing a sustainable stays program, including reducing the use of single-use plastic in all areas of the hotel, management operations to reduce energy and water consumption, which in turn will reduce the impact of the greenhouse effect, and invite guests to support this program by providing limited room equipment according to guest needs.
Responsible food cycle program (Responsible Food Cycle) is also very important. The hotel has optimized the stages of processing food ingredients on plantations/farms, distribution from vendors, serving food to guests, to processing food waste to control and improve the food turnover cycle.
Food producers, including farmers, breeders and vendors, are expected to have responsible processing systems and contribute to ecosystem balance, such as reducing excessive use of pesticides or vaccine drugs on animals. Education about the importance of wise food consumption is also provided to guests to help reduce food waste. After it was served, the kitchen team carried out further processing by separating food that was still suitable for donation, as well as separating leftover vegetables and fruit to be processed into organic fertilizer in the hotel’s urban garden.
There are many ways that can be done to support the food processing cycle, one of which is by processing organic food ingredients grown by the hotel itself. Novotel Jakarta Mangga Dua Square has a garden and urban garden area which directly functions as a source of food. Apart from that, the hotel also serves a healthy and delicious organic food menu, such as the a la carte microgreens menu which consists of five mainstay menu choices: Tuna Salad, Vegan Salad, Omega 3, Beef Salad and Chicken Salad. The five menus use organic vegetable base ingredients that are well processed and enhanced with microgreens which have many health benefits. These menus can also be served with additional protein toppings such as chicken, meat, eggs or fish. Vegetarian guests can also enjoy other vegetarian food options such as pizza and salads.
In the future, the hotel’s Food & Beverages team plans to continue to innovate with sustainable food processing, for example by processing watermelon rinds into pickles and various other creative food creations.
Apart from focusing on guests, Novotel & ibis Styles Jakarta Mangga Dua Square is also committed to involving hotel staff in sustainability programs. The staff is expected to be an example for guests in supporting the sustainability program implemented by the hotel. Management also provides ongoing training on this program, as well as encouraging environmentally friendly daily activities, such as turning off lights and air conditioning when not in use, turning off computers after finishing work, using Tumblr to drink water, and consuming room temperature water.
By encouraging this sustainability program, Novotel & ibis Styles Jakarta Mangga Dua Square is committed to providing a more environmentally friendly staying experience for guests. The hotel is also active in providing sustainable travel guidance, including information on public transportation, natural recreation areas and electric vehicles. This program is assessed based on four sustainability systems, namely sustainable management, environmental impact, cultural impact, and socio-economic impact on hotel practices. #MIA (RO/Z-10)
